Soooo where do you start with Flapjacks? Everyone has a version and most are great. They are a handy “on the go” snack but can be laden with calories or fat so enjoy but don’t over indulge. They are a good starter to the day with their oats and dried fruit.
Traditionally you make Flapjacks with porridge oats but I have a fussy one in the house who has an issue with textures yet loves Flapjacks so I decided to use oat bran which produced a really nice bar and got a big thumbs up 🙂
You need an 18 x 28 cm tray – basically a Swiss Roll tin. Line with parchment.

Preheat oven to 180C
Ingredients:
250g oats or oat bran
50g caster sugar (you can leave out the caster sugar and use 2 tbsp. brown sugar or raw can sugar if you wish)
100g unsalted butter
4 tablespoons Golden Syrup
150g of whatever you want – dried fruit such as raisins, apricots, cranberries, etc., or chocolate chips, chopped nuts .. etc
Method:
Melt the butter and golden syrup in a large saucepan as this will become your mixing bowl.
Add the oats and sugar (if using) and stir well to coat.
Add whatever dried fruits  you have chosen and mix well.
Bake in the preheated oven for 10 minutes. I left it in for another 2 mins as the oat bran is much softer than traditional porridge oats.
As soon as you take the tin out of the oven, mark the flapjacks into squares while still in the tin.
Leave to cool completely and then you can cut through and remove from the tin.
Store in an airtight container using parchment between slices.
