Coconut Protein Cookies – Gluten Free

Ooh imagine .… a cookie that has no added processed or refined sugars, has a high protein content, is full of fibre, healthy fats and is low carb! Well here it is folks and you can thank me once you make them and try them because they are beyond delicious! In fact, I would reduce the honey quantity as I found them quite sweet but try them and see for yourself what you think.

I used a locally produced honey which is completely natural and organic so if you can get similar, it all helps to produce a healthy cookie.

You can use any mix of seeds you like; I just happened to have sunflower and pumpkin seeds. I used a vanilla flavour whey protein powder but if you have a different one, try it to change the finished flavour of your cookies or stick with unflavoured if you prefer.

It’s a simple and quick recipe to make and I’ve converted it from cup measurements to metric for easier baking. I have modified the recipe from a US blogger, The Hearty Soul.

Ingredients:

108g coconut flakes or desiccated coconut
40g seeds of your choice
45g protein powder (gluten free if needed)
1 tsp ground cinnamon
50ml organic honey (you can reduce this for a less sweet cookie)
2 tbsp. water
2 tbsp. coconut oil
1 tsp vanilla extract

Method:

Preheat oven to 145C (fan) and line a baking tray with parchment paper.

Place all the dry ingredients into a large bowl and stir together to remove any clumps.

I heated up the coconut oil for easy mixing and then added it to the dry ingredients along with the honey, vanilla extract and water. I also used warm water so the coconut oil wouldn’t solidify.

You want to be able to create a solid enough shape when you press the mix together. If it’s too crumbly, then you can add a little more coconut oil or water.

Scoop the cookies on to the prepared tray. I used a medium sized scoop but you can use a small one to make thinner cookies if you prefer. Gently press the cookies down to flatten them and tidy them up.

Bake the cookies for about 15 minutes. You will see the sides getting golden brown. They will be a bit soft once you take them out of the oven. Leave them on the tray for about 3 minutes and then gently transfer to a wire rack to cool completely.

Here’s the good news – they taste even better the next day!! Keep them in an airtight container and enjoy while feeling oh so virtuous 😉
