Lentil & Feta Salad

This simple but very deceptive Lentil & Feta Salad is packed with superfoods and so even though it appears quite simple to make, it’s so good for you. Enjoy it as a side to your favourite mains or as a healthy main dish.

I roasted the beetroot with some spices before adding it to the salad as I think it brings out a richer flavour but it’s up to you. I always have a tin of some type of lentils in the cupboard as they are so handy to use in casseroles, curries and salads and they up the protein and fibre content. You can roast the beetroot any time before using and leave it till you need it.

To roast the beetroot, place some foil on a baking tray. Dice the beetroot into bite sized pieces and drizzle a little olive oil all over the beetroot pieces. Sprinkle over some turmeric and smoked paprika. Roast for 15 minutes at 180C (Fan) and remove from the oven. Spoon into a large bowl and keep till needed.

Do make the dressing below to add to this salad. It’s really lovely and brings out all the flavours.

Ingredients:

  • 1 tin organic Lentils
  • 1/2 Cucumber, diced
  • 6 – 7 Cherry Tomatoes, sliced
  • Handful of Rocket or Salad of choice
  • 5 mini Beetroot, diced
  • 1/4 pack Feta cheese
  • 2 small Yellow Peppers
  • Handful of Pumpkin an Sunflower Seeds
  • Handful of Pomegranate Seeds

Dressing:

  • 1 tbsp Olive Oil
  • 1/2 tbsp Balsamic
  • 1 tsp Maple Syrup
  • 1 tsp Mustard

Simple mix all the dressing ingredients together and whisk well. Leave aside till ready to serve.

Add the salad ingredients into a large bowl. Make sure they are all bite sized so easy to enjoy.

Then just pour over the dressing when ready to serve. Mix everything together and just enjoy!
