It may sound a bit out there but honestly, this bread recipe has proven ridiculously successful. The views and saves on my Instagram Account are some of the highest. It’s also a very simple to make recipe with no kneading, no rising time and doesn’t need lots of ingredients!
To top all that, it’s high in protein, fibre and nutrients and made in one bowl. I urge you to try it and let me know what you think. The reviews have been fantastic so I’m happy to stand over this one.
If you’re not a fan of cottage cheese, then simply blitz it into a sauce like consistency before using but honestly, you can’t taste it and the benefits are so high that it’s worth trying.
I’ve included a few tips below that might help to get perfect results. No loaf tin needed either; simply line a baking tray with parchment, get one bowl out and you’re ready to go!
Ingredients:
- 200g Gluten Free or Regular Oats
- 1 Scoop Protein Powder (Optional)
- 2 tbsp Chia Seeds
- 4 tbsp Mixed Seeds
- 1 tsp Baking Powder (GF if needed)
- 1 tsp Salt
- 300g Cottage Cheese
- 2 Eggs (large)
Preheat oven to 160C (Fan) and line a baking tray with parchment.
Method:
Into a large bowl add the dry ingredients and stir to break up any lumps. Next add in the cottage cheese and eggs and mix well to combine.
Bring the mixture together with your hands and move to the lined tray. Then shape into a traditional cottage loaf shape and finish by topping with some extra seeds. Bake for 45 minutes and check with a skewer inserted into the centre to check it’s baked through. Depending on your oven and how high you make it, you might need to give it another 5 or 10 minutes.
Remove from the oven once baked through and let it sit for about 10 minutes on the tray before you slice it. This lovely bread needs to be kept in an airtight container in the fridge as it has no preservatives. I usually cut mine in half, slice one half, separate with parchment pieces and then freeze and enjoy the other half from the fridge.
Slices will heat up nicely either in a toaster or in the microwave. It holds it shape well and is perfect with a bowl of soup too.
Tip:
Leave out the seeds and add almonds or walnuts
For a sweeter bread, use vanilla flavoured protein powder and add some sultanas
My bread took 47 minutes to bake through.
