Gluten Free Lemon Poppy Seed Muffins

Everyone who knows me will know that I am a big lemon fan. Anything with lemon will always be a yes from me and the blend of lemon and poppy seeds is a much loved and delicious one.

The most important thing to remember when making muffins is not to overmix. It will lead to a dense, tough muffin and no one wants that! Otherwise, this recipe is a wonderfully simple process of mixing dry ingredients with the wet ones, a gently stir and bake to result in light as air, fluffy lemon muffins.

I would recommend you lightly spray the paper cases so the muffins won’t stick. Line a muffin tin with the cases and preheat the oven to 170C Fan.

Ingredients:

  • 280g Gluten Free Plain Flour
  • 1 tsp Gluten Free Baking Powder
  • 1 tsp Xanthan Gum
  • 1/2 tsp Bicarbonate of Soda
  • 1/4 tsp Salt
  • 150g Caster Sugar
  • Zest of 2 Lemons
  • 3 tbsp Lemon Juice
  • 2 tbsp Poppy Seeds
  • 112g Butter, melted
  • 240g Sour Cream
  • 3 Eggs, Medium – beaten

Method:

Into a large bowl, add the flour, xanthan gum, baking powder, bicarbonate of soda, salt, caster sugar, lemon zest and poppy seeds. Whisk to combine and remove any lumps.

Into a small bowl, add the cooled melted butter, lemon juice, sour cream and beaten eggs. Whisk well to combine. Make a well in the centre of the dry ingredients and pour in the melted butter mixture. Gently mix together just enough to blend everything.

Use an ice cream scoop to divide the batter equally between the cases and fill about 2/3 of the way up**

Bake for 22 – 24 minutes until light golden brown. Remove from the oven and leave in the tin for 5 minutes before transferring to a wire rack to cool completely. Enjoy anytime!

** An option before baking is to mix 3 tbsp caster sugar with the zest of 1/2 a lemon and sprinkle a little of this mixture on top of each muffin before baking. This will result in a lemon flavour, crunchy topping.

You can dust with a little icing sugar before serving if you like. These muffins freeze well once completely cooled and stored in a freezer bag. They are perfect to take out and enjoy. Easy to transport and everyone’s favourite lemon flavour, these muffins will always be a big hit.
