Cranberry & Orange Loaf Cake

This is a delicious sweet orange flavoured loaf bread which is dotted with fresh cranberries and drizzled with an orange glaze to finish. It makes a great gift as it looks so pretty!

If you’re keeping it for yourself, you can omit the orange glaze but there is something quite heavenly about a slice with a burst of sweetness.

Even though it does take just over an hour in the oven, it’s so simple to make that you can busy yourself with something else while you smell the delicious aroma. It’s such a versatile recipe and can be used at breakfast, brunch, for a dessert … well you get the idea 😉

Biscotti Recipe

Biscotti are different from other biscuits in that they are baked twice so they dry out and are very crispy. Don’t let this put you off making them though as it’s a simple process just with one extra step.

Traditionally they are dipped into dessert wine but are equally delicious dipped into a cup of coffee.  Once made, they will keep for a couple of months if you store them in an airtight container. Nice! They make ideal gifts to give as they look so lovely in a cellophane bag tied with festive ribbon.

Gingerbread Decorations

This recipe makes the most delicious gingerbread perfect for decorations. They are slightly crunchy on the outside and then have a soft, chewy center which is sooooo good!

If you want to hang them on your tree, just make sure to use a skewer when they are on the baking tray ready for the oven. Push the skewer through and thread with festive ribbon once baked and cooled.

Chocolate Biscuit Cake Pudding (GF options included)

One of the most popular and ever prevailing recipes at Christmas is the chocolate biscuit cake and making it in a pudding bowl just adds a lovely touch and lets you decorate with fun, festive ideas.

You can make it in a bundt tin for something a little different or in smaller individual sized ramekins for a great gift idea. Using a plastic bowl means you only need the teeniest bit of greasing with a non flavoured oil just to help removal or if you’re using a tin, then you will need to line it with cling film.

Cranberry Banana Loaf Cake

If you have ripe bananas in your house and want something a little different, then this recipe is perfect. It’s so light and moist with the banana which contrasts so well with tart, fresh cranberries.

Making it with spelt wholemeal flour adds a lower calorie content and it’s one of the healthier recipes to try. I think it has about 92 calories per slice. If you don’t have spelt flour, use normal wholemeal instead.

The original recipe is made in a 2lb loaf tin but I made mine in two of the 1 lb decorative card cases. They look lovely and are perfect for gift giving.

Cinnamon Spiced Sweet Potato Muffins

Found this recipe on the web and wanted to try it for ages. We are split down the middle in our family over sweet potatoes. Half love them and half don’t so it was going to be interesting to see the results.

My first attempt wasn’t great. There was too much oil in the recipe and too much sugar. They tasted nice but I knew they could be made better so went about working it out and now I’m really happy with the final results.

Cinnamon Apple Cake – Gluten Free

I could wax lyrical about this amazingly comforting and delicious Cinnamon Apple Cake but it does all the talking for itself. Considering it’s a gluten free recipe, the lightness and moistness of the cake is such a welcome surprise.

I reduced the original sugar quantity as ground almonds are quite sweet and the totally delicious cinnamon sugar topping is heavenly and doesn’t need extra sweetness to fight with it.

Cranberry & White Chocolate Gluten Free Cookies

These went down a real treat with all the tasters and disappeared very quickly. I made half the original recipe thinking it might be too many but next time, I’ll be making the full batch! They make an ideal gift too!

I froze about 6 of them just to see how they behave and what I found worked was to let them defrost and then give them about 5 minutes in a moderate oven (150C) – just gave them a fresh feel. Remember to put a piece of parchment between each cookies before freezing.

These cookies are pretty irresistible and it’s an easy enough recipe to adapt so you can add your own favourites to it such as pecans, macadamia or other nuts. You can leave out the white chocolate and add milk or dark chocolate. Lots of options to explore so definitely a keeper!

Christmas Cake Recipe

This Christmas Cake Recipe is one I haven’t tried before, it was adapted from an Odlums booklet, but it’s very straightforward, it has lovely ingredients and it worked out perfectly. Can’t really ask for more than that! There’s very little skill needed in putting together a Christmas Cake. The preparation and baking times are the key to a successful result!

The ingredients are listed as usual but do take a look at my video on making this cake for alternatives to suit your own taste. Also there was a little blip regarding the brandy but it worked out really well so it will be up to you what way you proceed. Banana Walnut & Chocolate Chip Gluten Free Loaf

Such an easy and quick recipe to put together and enjoy with your morning cuppa or for a treat in the middle of the afternoon! Really do you need an excuse at all?? 😉

I’ve adapted the original recipe from the Good Food files as not everyone likes a strong banana flavour and I substantially reduced the sugar from the original recipe as ripe bananas are very sweet on their own plus the addition of chocolate chips make this plenty sweet for everyone’s tastes.
