Baked Doughnuts

These baked doughnuts are a great alternative to the original fried ones which albeit are pretty delicious, they are heavy on the calories and fat! I used fat free natural yoghurt to make these. To decorate, I made a chocolate glaze and only covered the top of each doughnut with this but if they were for a party or special occasion, you can put most of the doughnut into the glaze mix to almost completely cover them and then dip into a bowl of your chosen sprinkles to finish off.

If you have kids, they will love decorating these!

No Sugar Banana Muffins

These muffins are light and fluffy and because I’ve changed the recipe to have no added sugar, they are a perfect breakfast choice, a snack on the run or an afternoon time out with a cuppa. They are great to give to the kids too!

I topped them with just 3 little chocolate chips and a walnut just for a little bit of yumminess but you can leave them out if you prefer. Eat them hot or cold.

Rocky Road Cupcakes with Marshmallow Frosting

I made these very cute cupcakes to bring with me to a dinner party where there were going to be children so they wouldn’t feel left out while the adults had their “grown up” dessert . They went down a treat and the adults had to try them and loved them too! They are not made in the traditional cupcake method so end up having a lovely fudgy texture. The marshmallow frosting is simply gorgeous, very sweet and delicious and you can make the rocky road bark whatever way you like using what you have on hand. I adapted this recipe from Jo Wheatley who won the Great British Bake Off.

Chocolate Orange Cupcakes

When I saw this recipe, I couldn’t get it out of my mind. I knew I had to make it and even though it was a few weeks between spotting it and trying it, it was worth the wait. These cupcakes are full of Terry’s Chocolate Orange chunks throughout and I added a little ingredient to bring out the full flavour of orange and chocolate – a match made in heaven! The buttercream is made with orange juice and zest and of course you have to top them with slices of Terry’s Chocolate Orange  to complete their deliciousness!

Wholemeal Banana Oat Muffins – Dairy Free

A lovely healthy and nutritious version of a firm favourite using wholemeal instead of plain flour and healthy oats. The spices give a lovely flavour but you can leave them out if you want a plain muffin. For those on a dairy free eating plan, these are perfect as vegetable oil is used instead of butter. They are lovely and moist and not too sweet so perfect for on the go, a quick breakfast or great snack.

Madeleines

These little beauties are also known as French Madeleines and are usually made in a madeleine tin which you can buy in most shops. They are pretty shell shaped cakes which can be served plain, dipped in white chocolate, drizzled with lemon icing … lots of ideas. I added lemon rind to mine as there’s no such thing as too much lemon; you could use orange rind if you prefer or add a few drops of almond essence. They are perfect bakes for an Afternoon Tea piled delicately on a pretty cake stand. They also make the most lovely gift in a bag tied with a pretty ribbon.

Nutella Cupcakes

This recipe basically uses up one large jar of Nutella between the cupcakes and the icing. You can also use some melted Nutella to drizzle on top of the finished cupcakes.

I don’t use Nutella any longer and that’s a personal choice but there are lots of alternatives to choose from which you will find in the Health Food section in supermarkets, also with the peanut butters & spreads section and in all Health Stores.

Because there’s sour cream in the ingredients, you get a really moist and light result which is a pleasant surprise as small cupcakes can suffer from over baking and drying out..
