Oat & Blueberry Cookies

In no time, bake a batch of these lovely soft and slightly chewy cookies using fresh or dried blueberries. They are full of oaty goodness and I’ve reduced the sugar substantially from the original recipe. They still taste lovely! If you like, you can drizzle melted white chocolate over the top of each cookie for a very pretty display.

For a change, why not add dried cranberries, sweet sultanas or raisins and keep everyone happy. When using these dried fruits, I find they are plenty sweet enough so the need for processed sugar is not required.

Chocolate Orange Cookies

There’s a lovely baker called Jane who adores anything that has the combination of chocolate and orange and she regularly uses Terry’s Chocolate Orange to create wonderful recipes! I find Jane’s Patisserie a great source for those recipes that tend to create lasting memories and her Chocolate Orange Cookies are certainly one of those!

They are a wonderful combination of crispy edge and soft, chewy centre and are seriously, seriously good! I bought a second box so I could place a wedge on top of each cookie but that’s up to you. They do add something very special to the finished product though ….

Nutella Chocolate Traybake

I’ll give you a little warning before you make this cake. It’s rich, it’s full on and it’s for true chocolate lovers. It’s really gooey and has a surprise centre of soft, creamy Nutella just for extra decadence!

I make this recipe in a baking tray so it can be cut into squares to share out.

You need 16 tablespoons of Nutella and it’s easiest to spray the measuring spoon with some oil beforehand to make it simpler to measure out without ending up covered in sticky Nutella 🙂

Cherry Shortbread Hearts – Gluten Free

Tried out these gluten free shortbread hearts as they looked so delicious and gluten free shortbread can be difficult to get right. A few things needed to be adapted to get it right but after that, they worked really well and are totally delicious and addictive!

They don’t have to be heart shaped but they do look just lovely like this and are a great gift to box up and give to someone you love.

Iced Lemon Traybake

This is a recipe from Mary Berry’s Baking Bible. It’s a traybake which always work so well when you have a crowd or when you have to transport your bakes as they can be left in the tin till ready to serve.

You get the lightest, just like pieces of lemony clouds once you follow the steps. It’s a very simple recipe which has never failed to go down really well. The topping originally is a lemon flavoured icing but if you prefer, make up a drizzle with caster sugar, heated with a little water to which you add the zest of a lemon and spoon over the top of the still warm sponge. Raspberry, Blueberry & Lime Drizzle Cake – Gluten, Wheat & Dairy Free

Where do I start about this gorgeous recipe? It’s impossible to tell the difference between this and a cake made with traditional ingredients and I’ve made enough to know. I’m always dubious about people claiming their cakes made with all sorts of strange ingredients taste exactly as a normal one as I’ve yet to have that experience, but this recipe delivers and how.

You can keep it dairy free using a dairy free or soya spread but if not, just use Stork. The flour is Doves Farm which I always use and it’s gluten and wheat free, comes in both self raising or plain.

If you’re going to try gluten and wheat free baking, then you will need to have Xanthan Gum in your larder. It’s essential to hold together cakes and pastry and stop them from crumbing. It’s easily available in most supermarkets and mine is the Doves Farm one.

Oat & Honey Biscuits

These are great biscuits to have in the house for when you just want something a little sweet but not sickly with your cuppa. They are crunchy on the outside and soft with a cinnamon kick on the inside. Pure comfort! They only take 15 minutes in the oven and a bit of mixing to get them oven ready and by using great Irish honey and oats, they rise to another level.

Chocolate Digestive Biscuits

Homemade digestive biscuits are so rustic, so tasty and practically healthy with their wholemeal flour, oats and wheat germ, that having one or two with your cup of tea seems almost a good thing! There is very little sugar added to this recipe so really, compared to the shop bought, very sweet digestive biscuit, these soar way above and are most definitely worth making. They don’t have that very sweet taste the processed ones tend to which is refreshing!

I used milk chocolate to cover mine but if you prefer dark chocolate, then by all means go ahead and use that. I made a batch and they were gone in quick time. Try them …. go on …

Healthy Low Sugar Flapjacks – Can be made Gluten Free

These are a healthier version of the traditional Flapjack and nowhere near as sweet as them. Using bananas and apple to bind the mixture, it straightaway cuts down on the amount of sugar used. I made a more adult version which replaces the peanut butter with tahini and I added dried cranberries to make up for the lack of sweetness from removing the peanut butter.

Organic honey, apricots, raisins and oats all add to a really great snack on the run and if you add in a good handful of mixed seeds, you have a great “power snack”.

I’ll give both options in the list of ingredients so you can choose which will suit you and your family best.

Nutella Cookies – Gluten Free

We were given some shop bought cookies that are gluten free and I was so disappointed at the taste. It’s a pity this is what’s available to coeliacs as a treat. So I found this recipe and they are just the bomb. They really taste great and you won’t buy biscuits again after making these.

The mention of the word Nutella seems to send lots of people into raptures of how they eat it, how they love it and how delicious it is. All this is very true. Nutella is a jar of sheer luxury, decadence and total indulgence!

This is a quick and simple recipe for gluten free cookies using Nutella as the main ingredient. Adding an egg with an egg white gives them a touch of lightness that adds to their appeal.
