Caramel Florentines – Gluten Free option included

The original recipe for these delicious florentines was from the lovely Laura of Bake Off fame. She made her version during the series competition and they were very well received and I think she may even have got rare “Hollywood Handshake” for them.

I used a slightly bigger cutter than recomended and changed one or two ingredients plus quantities. When I made a second batch, I decided to convert them to Gluten Free and they worked equally as well so a big bonus with these!

You could make them smaller as they really spread out hugely; I mean really spread out so leave tons of space between them and you will still probably have some spreading into each other but don’t worry, you can do a bit of adjusting once they’re out of the oven and still hot.

So let’s get on with making these perfect mouthfuls of delight …

Raspberry Bakewell Sponge Cake

I am such a big fan of the traditional Bakewell Tart but sometimes I just don’t want to make the different components and it’s quite sweet so when I saw Jane’s Patisserie’s bakewell cake version, it was the perfect fit for me to have my bakewell fix without the effort.

I’ve made a few changes (as usual 😉 ) and it worked out really well. It’s full of the traditional Bakewell flavours we all love and using ground almonds really helps to keep it light.

Another bonus is that it needs so little to serve it up. The almonds and a dusting of icing sugar are the perfect finishing touches.

Coconut, Almond, Lemon & Blueberry Cake

This delicious cake is full of superfoods and as I’ve reduced the sugar content by 70% from the original recipe, it’s practically healthy! You have to make it!

It’s a versatile cake which is just as nice at room temperature as it is heated and served with some cream. No equipment other than a whisk and large spoon needed along with your bowl and prepared tin. It’s made in a 23cm tin so easily feeds 10-12 people.

Apple Cake

Cannot recommend this recipe highly enough! It’s a Bord Bia award winning recipe. It’s simple and gorgeous and I can’t say enough about it. So light, so lovely, so perfect for afternoon tea, morning coffee …. oh anything really!

No mixer needed, no special ingredients … just pure and simple perfection! You may have guessed, I’m a fan 😉
