Gluten Free Almond Bites

We’re big fans of anything almond flavoured at cozebakes HQ and when they are gluten free, it’s a bonus for us with two coeliacs to cater for. The added issue of a preferred low sugar diet can complicate things sometimes but this recipe seemed to have lots of potential.

Initially I doubled the quantities as it seemed a very small amount to spread out in a 20cm square tin. Personally, I’ll be making these again and just dropping scoops of the batter onto a baking tray rather than what the original recipe suggests. Either way, they are really, really delicious. As per usual, I reduced the original sugar quantities and think they are lovely but if you like a good sweet kick, then check my suggestions in the ingredients.

Cinnamon Oat Cookies

This recipe originates from Shugary Sweets but I wanted to make these lovely cookies a little bit healthier. I also wanted them to be good for your daily cuppa or equally perfect to give as a gift, bring to a Coffee Morning or enjoy with friends. They have a lovely mix of spice and can be served with or without the cinnamon icing.

You can easily convert these cookies to Gluten Free. Simply use GF oats, GF plain flour and GF baking powder.

I baked them for 15 minutes at 170C (conventional oven) but if you like your biscuits on the crunchy side, then leave them in for 16/17 minutes just to give them that bit extra.

Homemade Custard Cream Biscuits

These are not perfect copies of the original Custard Cream biscuits but they taste amazing! A real treat is they taste even better the next day as the cream and biscuit blend beautifully together. They are pretty straightforward to make and will go down very well with everyone.

I know that we all try to eat more healthily and to reduce refined sugar in our diets and especially when baking and/or cooking for younger people but at least when you bake your own treats, there are no hidden ingredients and you know exactly what you’re serving up. It’s about having one or two and putting them away till the next time. Everything in moderation!

Oat & Blueberry Cookies

In no time, bake a batch of these lovely soft and slightly chewy cookies using fresh or dried blueberries. They are full of oaty goodness and I’ve reduced the sugar substantially from the original recipe. They still taste lovely! If you like, you can drizzle melted white chocolate over the top of each cookie for a very pretty display.

For a change, why not add dried cranberries, sweet sultanas or raisins and keep everyone happy. When using these dried fruits, I find they are plenty sweet enough so the need for processed sugar is not required.

Chocolate Orange Cookies

There’s a lovely baker called Jane who adores anything that has the combination of chocolate and orange and she regularly uses Terry’s Chocolate Orange to create wonderful recipes! I find Jane’s Patisserie a great source for those recipes that tend to create lasting memories and her Chocolate Orange Cookies are certainly one of those!

They are a wonderful combination of crispy edge and soft, chewy centre and are seriously, seriously good! I bought a second box so I could place a wedge on top of each cookie but that’s up to you. They do add something very special to the finished product though ….

When I made  this recipe, honestly, I almost had to say a Novena after eating one! They are positively heavenly and sinful all at the same time. I saw the recipe on a great blog, My Baking Addiction and though they are a little messy to make, it’s worth it! Forget the diet for these Rolo Cookies!

Mint Crisp Big Chocolate Chip Cookies

I was shopping and saw there was a special offer on Cadbury’s Chocolate Mint Crisp bars and figured I could do something with them. The vote was between cookies or brownies and the cookies won plus they are great for gifting too.

I found this recipe which uses eggs and egg yolk and gives them a nice chewy texture with crispy edges and knew the mint crisp pieces would be perfect in every bite.

Orange & Cranberry Shortbread Cookies

A simple and make ahead recipe that results in delicious shortbread cookies. They are melt in the mouth, buttery with the delicious addition of zesty orange and cranberry pieces.

The trick for perfect shortbread is not to overbake them. Take them out before they look “done” and you will have the perfect shortbread cookie. The other great thing about Shortbread is that it requires no eggs so if you have an allergy, then this recipe is for you.

Originally the recipe was coated in caster sugar before baking but I changed it to Golden Caster Sugar just to give them a slight golden hue and an added flavor burst.

Cranberry & White Chocolate Gluten Free Cookies

These went down a real treat with all the tasters and disappeared very quickly. I made half the original recipe thinking it might be too many but next time, I’ll be making the full batch! They make an ideal gift too!

I froze about 6 of them just to see how they behave and what I found worked was to let them defrost and then give them about 5 minutes in a moderate oven (150C) – just gave them a fresh feel. Remember to put a piece of parchment between each cookies before freezing.

These cookies are pretty irresistible and it’s an easy enough recipe to adapt so you can add your own favourites to it such as pecans, macadamia or other nuts. You can leave out the white chocolate and add milk or dark chocolate. Lots of options to explore so definitely a keeper!

Syrupy Biscuits – Gluten Free Version Available

These yummy biscuits are full of all those childhood taste memories. Golden Syrup, Oats, Condensed Milk, Cornflakes and Custard Powder …. they are just so delicious and the bonus is they literally take minutes to make, less than 15 mins in the oven and a bit of cooling time.

I adapted the recipe to make it Gluten Free but I’ll list it as given and put the gluten free options and additions in brackets. They will last for up to a week in an airtight container.

Lemon Kisses

These gorgeous little bites of lemon heaven are very simple to make but do make sure to leave them chill in the fridge for 30 mins before baking. The only other thing to remember is to try and buy or make really good quality lemon curd to fill them. You need that sharp and lemony bite to make all the difference.

I put them back into the fridge after making them to set the icing and so the lemon curd would take a hold of the biscuits and not slide off. They were pretty delicious cold too! The recipe called for the zest of 2 lemons and to use only one in the batter and the other to decorate the biscuits but I added the zest of both to the batter as you’re coating them with a lemon icing and there is no such thing as too much lemon 😉

Soft & Chewy Chocolate Chip Cookies

This is a very traditional American style chocolate chip cookie recipe. The result is a soft, chewy cookie with crispy edges. I put them into an airtight container as soon as they are cool enough and that keeps them chewy. If you prefer, you can keep them out on the wire rack for longer to crisp up a bit more.

The recipe was given to me years ago from an American friend and I’ve converted the measurements to grams. == The only question you will be asked once you bake these is “can you make more!”
