Almond & Cranberry Cake – Gluten & Grain Free

The taste and texture of this delicious cake is so comforting and warming and it can be made ahead. It’s perfect to serve after a meal with friends and family. Some people wanted cream with it and others had ice cream. It worked so well with both!

The glaze to top the cake can be made while it’s baking in the oven. It’s a fantastic finish to the cake and definitely needs to be included. Don’t be tempted to skip it and if you’re making it ahead, just keep the glaze in the fridge till needed, pop it in the microwave, spoon it over the cake when you’re going to serve it.

Mango Vegan & Gluten Free Cake

I’ve made this cake in a bundt tin as it needs so little decoration because it tastes so good that I felt a bundt would help it to look wonderful.

I love bundt tins (you might have guessed from some of my other recipes) as they take any cake and simply raise it up to another level of fancy and showstopping. What’s wonderful about bundts?? They do all the work and you take all the credit!

You can make this cake as a regular vegan one if you want to and I’ll list the Gluten Free changes needed below in the ingredients. Obviously there’s no butter or dairy products in the cake so it’s also a great healthy option. I used coconut oil to grease the tin rather than butter and floured it as normal (using GF flour).

Celebration Fruit & Christmas Cake – Gluten Free

If you’re looking for a traditional style fruit cake to decorate for a special occasion and one that’s gluten free, then this will be your “go to” recipe. It’s rich and dark and holds really well for fondant or other icing and decorating. It’s perfect for Christmas!

This recipe makes an 8″ round cake. If you double the quantities, you will get a 10″ cake for greater numbers.

I’ve adapted it a little to give it a bit of depth and it’s worked really well. The recipe is originally from a gluten free magazine.

Orange or Lemon Drizzle Gluten Free Cake

This recipe originally called for a chocolate coating (it was a variation of the traditional) but it was so light and delicious that I felt it would have ruined it to cover it completely with chocolate and that you might miss out on the lovely citrus kick. You can make this as the traditional Lemon Drizzle Cake but it works really well using orange for a change 🙂

A few suggestions before you start baking:

  • Go for an extra citrus kick by using the zest of 2 oranges or one each lemon and orange
  • Make the cake dairy free by using almond, coconut or soya milk and dairy free spread
  • You could add a good handful of chocolate chips to the batter at the very end but fold gently

Gluten Free Apple Cake

This recipe originates from Jo Wheatley of Great British Bake Off fame. It’s a family favourite passed down from her aunt. As I live with a coeliac who loves anything with apple in it, I wanted to adapt this one so everyone could enjoy it. It worked out really well and is a very easy, straightforward and delicious cake. It’s crying out to be served with some custard or cream (your preference) and could be dressed up to make it a little bit special by adding a caramel topping.
