Fruity Coconut Bites – Gluten, Dairy and Wheat Free

I love finding recipes that are both healthy and delicious while omitting refined sugars. These delicious bites of fruit and coconut uses the fruit and honey as a natural sweetener and using Brown Rice Flour brings them up another notch on the healthy snack ladder.

If you can’t find a brown rice flour, then sub gluten free rice flour. I got a some brown rice flour from my local health shop.

No Added Sugar Lemon Honey Oat Biscuits

These biscuits are for when you want to be good but still want a treat and using honey instead of any processed or refined sugar helps to make these a perfect choice. Honey has a lot of advantages over refined sugar so is a good choice.

Using oats gives them great texture and if you use gluten free oats and gluten free oat flour, you can serve them to coeliacs too.

Just be aware not to use a large lemon. Only use a standard one and only zest half of the lemon and use the juice of one half only. Otherwise they can be overpowering as you don’t have the sugar to combat the tang.

Lemon and Honey just work really well together and I’ve adapted this US recipe to grams and offered a few options for ingredients.

Blueberry, Lemon & Honey Cake

I really can’t resist anything that says lemon and then they add blueberries and what do you know, another favourite, honey! Had to be made!  It’s a simple and quick to make loaf cake and it’s so moist and full of fresh blueberries and yet you can still taste a hint of honey throughout. Really nice!

You can dress it up as much as you like depending what you want it for. I brought it to a coffee morning so I added a lemon icing drizzle and used edible flowers. Equally you can just sieve a bit of icing sugar over the top and serve with a bit of fromage frais if you prefer.

Oat & Honey Biscuits

These are great biscuits to have in the house for when you just want something a little sweet but not sickly with your cuppa. They are crunchy on the outside and soft with a cinnamon kick on the inside. Pure comfort! They only take 15 minutes in the oven and a bit of mixing to get them oven ready and by using great Irish honey and oats, they rise to another level.
